Good topic.

I always liked Mark Donohue, one quote of whose (paraphrasing) went something like:

Porsche engineer (talking about a 1500bhp engine in the 917/30):
"Does it have enough power?"

Donohue replies:
"It will have enough power when the rear wheels are still spinning on the entry to the next corner at the end of the straight"

C

I've seen the quote in a few forms in various places.

It's not really a racing quote but funny enough to post it.

Well, yes. I've read that quote since the 60's. However, I like more the quote by Dan Beaver:

"To finish first, first you have to finish fourth."

Some other quotes:

"Christ - I used to complain that this thing was underpowered, I must have been mad" --Chris Amon--

Unknown Mechanic: "Oi oi Mark, ya basterd, how ua doing"
Mark Blundell: "We've just gone live..."

"We've been having some handling problems, but I'm sure we can handle them" --Jean Todt--

"If, like me, you think that F1 is just a few blokes driving round till Michael Schumacher wins, then these sites are not for you" -- Journalist comment at "The Independent" (he must have been talking about this site).

"And the race started , it was a poor start... but what the hell is going on??? No one overtaking, no one!... Just look at them... They are driving swerves.. They are so slow.... Is this some kind of a strike? This is scandal this is scandal. I don't remember seeing that before. Oh, yes... I am sorry, this was just a warm-up lap." -- Mladen Delic --

I prefer Mika's "To finish first, first you have be Finnish."

How do the Centaur image and the quote above relate to racing?

That is an image of a Unicorn crossed with a Centaur. The image refers to the quote in your signature line. It was directed to you, I thought you would appreciate it.

The second quote is from a movie called "Talladega Nights: The Ballad of Ricky Bobby" starring Will Ferrel. It was huge box office comedy about NASCAR, and the quote was used over and over in the movie.
