McLaren look pretty tidy, other than front-left locking into the back hairpin.
And it's clear from how lazily the McLaren turns, and how slowly it accelerates, that it's running a lower engine mode and has a reasonable amount of fuel on board.
Fuel and engine modes are going to be the hardest things to pin down between the teams, but previous pre-season tests would suggest McLaren is running with 40-50kg of fuel and has the engine turned down. Merc, Ferrari and Red Bull are similar.
Sauber/Stake and VCARB ran with their engine modes higher and lower fuel in previous pre-season tests, which is why they looked so good until the first race arrived. Dani Ric's acceleration from the traces in the car thread indicate a higher engine mode and lesss fuel.

They blurred details, yes, but we had enough pictures of the real thing to confirm how it would look like.
If you go by nothing at all when it comes to data, and just base it on how "developed" each car looks compared to last year, McLaren looks mild and barely changed.
How it looks and how it performs are completely unrelated things though. Personally, I am worried that McLaren will no longer enjoy the privileges of being a podium contender every race this year, but I am also adamant against making predictions based on day 1 of testing.
From what I saw myself, the car does seem to have understeer and its very noticeable against the RedBull.
How much of that is weight/setup related, and how much of it is a baked in characteristic, it's hard to tell right now.
