You lose massive time whenever the front comes up. Your aero goes to hell, you can't accellerate well, and you suddenly have to worry about controling the direction you're headed in. That last one may not seem like a big deal, and isn't when you're just being a moron popping wheelies down the highway, but in racing any attention you have to spend on nonsense is attention you no longer have to spend on being fast.
A standard bike racing trick whenever you come over a rise that would send your front end airborne is to quickly touch the rear brake just as you hit it. The speed hit is well worth it.
The bike in that vid is making around 210 hp, and will necessarily have a much more drivable powerband than the F1 car. A modern motoGP bike will have considerably more power and be even more drivable. Even better, the F1 car in the video has a much nicer engine for drag racing than the one currently used.
Unfortunately, the bike will be traction limited for the entire race, while the F1 car goes HP limited somewhere in 2nd gear. My guess is the first time they did that video the F1 team used a max downforce setup and ate the bikes lunch, and was then asked to drop some downforce in order to make it at least a little entertaining.
