How do teams do it?

Even structures like the nosecone with the wing mounts hanging down. Is it done using mult-part molds?

What about the curved elements leading up from the back of the sidepods towards the rear wing? Are they constructed in the same way (or at least, similarly to) that fins are attached to surf boards? (filler, then carbon tape over that, which is then sanded down and smoothed).

Here is our link to a general discussion of carbon fiber moulding - along it's meandering path - I mentioned 2 books - which discuss, among other techniques - using foam plugs, wet layup of carbon fiber, then the form can be removed - they are books on homebuilt airplanes - many members included interesting information - would you consider combining threads? There are many interesting threads - Perhaps glance through the index.
