If headers went up(10 - 90 degree angle) instead of down wouldn't that be a design that flows more freely because hot gases rise?

The pressure from the engine pushing out exhaust gas, the increased air pressure above the car, and the relatively decreased pressure behind the car at racing speed, all of these likely dwarf the contribution of temperature to flow velocity.
