Well, I autocross a Solo Vee, which is a Formula Vee with a rules package that allows us to run with Formula Fords. We can have disc brakes all around, rack and pinion, 1915 cc with single 2 barrel carb on the air cooled VW, any wheel and tire size we can fit, any gearing that will fit in the case, and a posi if we want it. Also 1,000 lbs with driver. Aero anything is prohibited. We use a zero roll rear suspension. I imagine that you as well.
BTW, the Formula Vee rules here specifically exclude aero, such as your splitter (nice work there BTW) and our floor must be no wider than 18 inches, I believe and completely flat. Formula Vee is well established and expensive relative to it's speed because specialists have figured out how best to use all this old tech and fight changes. There is a class called Formula First which has similar rules to yours as a next generation Formula Vee, but right now I think it's restricted to regional classes.
