The plot shown is velocity vs track distance. If the plot was velocity vs time, the true value of extra velocity on the straights vs corners would be apparent.

I think the delta in the corners (considering the exit as well) is higher than the one in the straights.
The plot doesn't differentiate corners, exits, straights etc - it simply shows the total distance for which one car is faster than the other. The Mercedes is faster for a very short distance only, but due to the low speeds, this is a relatively long time.
