So some drawings (my very first pc drawings of f1 parts!). I believe the airflow will be more or less like this:
Image
The monkey seat will create a low pressure field right behind it (evident by the high angle of attack we've seen on them until now). The flow is further energized by the exhaust, speeding up the airflow and dropping the air pressure even more. This will act as a 'stepping stone' between the diffuser and the rear wing. The airflow coming from underneath the diffuser will tend to rapidly expand. The low pressure zone from the Y100 winglet is excellent for this expansion, drawing in the airflow from there.

Furthermore, this creates quite a big upwash. Low pressure from underneath the rear wing will follow this upwash, and stays better attaches to underneath the rear wing.

Do note this only happens in the middle. Airflow at the edges isn't going to influenced by the monkey seat, so will not be extra beneficial for downforce production.

I don't believe I drew the airflow lines completely correct. If anybody feels doing a better job then me at that, here's the clean rear wing. If used anywhere else then in this forum, do credit me (I spend a lot of effort on it!)

I think that's a fairly accurate description of what the monkey seat does. 50 mm wider and being blown by the exhaust makes it all the more important in 2014. So I was surprised not to see a monkey seat on the W05 at the launch. Thankfully, they heard me and bolted on a monkey seat on the second day of testing

Extra benefit: the center of the rear wing is the part most prone to stalling, and it is exactly the one being helped. Does the same, the center being more prone to stall, apply to the diffuser too?

The center of the diffuser is taken up by the start motor hole and the rear crash structure. There isn't so much a centre diffuser.

The McLaren version looks very much to me like it's designed to direct the exhaust plume to the underside of the main wing, especially as the 2 stage approach would seem an inefficient way to move air but a good way to coax up a hot plume. In my mind the hot gases should expand and cool creating low pressure under the wing but I'm just guessing.

It essentially energizes the airflow underneath the rear wing, speeding it up and creating a low pressure - more or less like you said.

I'll do a drawing of the mclaren rear also. Will take some more time though.

It is not fully like that. I think this year we will see more monkey seat without endplate, or with short endpaltes, to let the tip vortices roll undernath the monkey seat and produce downforce, accelerated by the exhausts.
