Stroll is a guy who bought his way into F1 very unprepared and had people calling for his head immediately.
With time and effort he made himself into an ok midfield driver(which is respectable), so the jokes basically stopped.
His "problem" is that he now finds himself a very desireable seat, and the fact that he isn't fast or consistent enough for such a high end car are starting to come into evidence.
I wonder when it's gonna be the time that Lawrence has to tell Lance "you've been here long enough, maybe try prototype racing or F-E now?".
I suppose it depends if his desire for a title is more than his desire to have a highly rated son.
TBH, I do not see Stroll jnr as a bad driver just as you say, he was not prepared by the same track other drivers had to follow.
Alonso himself says something similar and seems prepared to put in a bit of assistance to make it a good team (with 'star' and 'backup' drivers of course)
I think he could do a reasonable job and with some luck falling his way become a 'respected driver' in the history books even if not by some who currently follow F1. There have been worse who did not show potential.
On the up side, if Stroll snr was not there putting money into this team, they would still be a mid table team, if they were even still in existence.
