For non aero sensitive cars (that is touring cars) I would say option number 1.

For aero sensitive cars with ground effect cars (prototypes, openwheelers and aero modified touring cars) some option 3 is missing there.

A racing car wont roll more than a couple of degrees (in very extreme cases) so I wouldnt bother of option 2.

As long as the car still does what you want it to do.

Well, in F1 you have to keep the front wing as stable as possible, because any change in wing height will change down force, so... no.

Not only that, too much roll would upset the floor's downforce function dramatically, shifting load from side to side.
